Oat, Date and Ginger Hot Porridge, with Coconut Cream

I have always loved hot porridge but sadly very few people have bothered to take this to a fine art! I mean porridge conjures up images of runny, lumpy, gruel for most people, alongside memories of dry old maiden aunts and boarding schools! At least for me it does so that's why I have been hellbent on making hot porridges taste closer to pudding, while retaining all it's nutritional value. So, here goes again...a deeply satisfying, nutritious hot winter porridge, that is also wheat-free and sugar-free. :-)


Ingredients:
1 cup raw oats
6-8 dates (stoned)
2-3 cups just boiled water
2 generous pinches dried ginger root
1/4 teaspoon salt
A few tablespoons coconut cream

Add oats and dates to blender and whizz until dates are in crunbly pieces.
Add to small saucepan, add just boiled water and turn heat to low.
Simmer until oats is soft but not too soft.
Add salt, ginger and serve hot with coconut cream.
That's it! Quick, satisfying and absolutely delicious!
